Small stoles for Baptism

I'm a grandmom who has her two six year old grandsons living with her. As they were abandoned by their mother, I am helping my son raise the boys. We are finally going to have them Baptized, and I will be making them white brocade stoles to wear since they will not be wearing a Christening outfit. This will also be a keepsake of their receiving their first Sacrament. Since the stoles will only be worn once, do I still have to use interfacing? I was planning on using the white liturgical brocade on both sides rather than line in plain satin. Is that okay to do? I will be applying a small iron-on gold cross on both bottoms. Should I also try to hand stitch them in place before sewing the pieces together? Any help you can give me will be greatly appreciated. Thank you. Pat Puglise
